Mini Zucchini Burgers

This is a great electric skillet meal and so delicious. If you aren’t crazy about zucchini, you can leave that out. These are the ingredients.

1-1/2 lbs lean ground beef
1/4 cup shredded zucchini
2-1/2 cups sliced zucchini
1 can stewed tomatoes
1 can tomato sauce
2 baking potatoes cut into large cubes
small onion sliced and cut into large pieces (take 2 or 3 slices and dice to put in the meat)
salt & pepper
You can add garlic powder or chili powder or whatever spices you like.

 

Peel and cube the potatoes, take one zucchini and finely shred it. I leave the skin on. It adds appetizing appeal and it’s healthy for you.

Then put the ground beef, diced onions, shredded zucchini, salt and pepper into a bowl and mix. Roll medium size balls in the palm of your hand and flatten the balls. I put them in the electric skillet and cook them thoroughly.

 Then I put the potatoes, zucchini, stewed tomatoes, tomato sauce and cut onions in on top of the mini burgers. Cook this meal with the lid on but occasionally stir the ingredients.

While this is cooking, I prepare the French bread. I got this recipe from The Pioneer Woman. I purchase one loaf of whole grain French bread and slice it lengthwise down the middle and slather a stick of butter on both pieces. You can cut back if you think that’s too much butter but really, it is best made this way.

Put it in a 350 degree oven for 4 minutes, just long enough to let the butter melt into the bread. Then turn on the broiler for 4 or 5 minutes to brown the bread.

 Cut the long strips into thin “finger” strips.

 

Remember to keep stirring the ingredients so that the juices thoroughly cook everything.

 

And serve. We usually have enough for left-overs the next night. It tastes even better then.
