I know most of us are probably not interested in rich sweets now, after making it thru the holidays. The reason I like this cookie recipe is because it isn’t overly sweet. When I want to munch on something that’s just a little bit sweet and not chocolate, these cookies are great, and very easy to make.
Pre-heat oven to 350 degrees.
Here’s the recipe
1 1/2 cup flour
1/4 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 cup shortening (not oil)
1 cup sugar
1 egg, beaten
1/2 cup rolled oats (quick oats)
2/3 cup buttermilk
This recipe can be doubled. Mix ingredients in a bowl.
Drop spoonfuls onto an ungreased cookie sheet.
Bake at 350 degrees for about 10 to 12 minutes. You can cut back the cooking time to 7 or 8 minutes if you want softer cookies.
I lay them out on newspaper to cool, cause that’s what Mama always does. You could place them on cooling racks.
Try not to eat them all in one sitting.
